

I made mozzarella cheese today. It was both easier and harder than I expected, if that makes any sense. The next time should go more quickly since I have an idea what to expect now.
It is. So. Good.
I got a bigger chunk of cheese than I expected from 1 gallon of milk. The whey is sitting in the pot overnight to gain acidity and Iapos;ll try making ricotta from it tomorrow.
Om nom nom...
Iapos;m going to need to make more this weekend.
